Sarciadong Galunggong

Had left over fried Galunggong from last night’s dinner and you want to re cook it in a different way? Try this easy to cook Filipino Dish that your kids and the whole family will definitely love. 🙂

Estimated time of preparation and cooking: 30-40 minutes.
Good for 3-5 persons.

Ingredients:
4-5 pieces medium-sized galunggong, cleaned. Normally, the tindera (the lady who sells in the market) will clean it for you
2 medium sized eggs, beaten
2-3 medium-sized tomatoes, sliced lengthwise
1 medium-sized onions, diced
4 cloves garlic, minced
1 cup water (may add more if you want more soup)
fish sauce and ground pepper to taste
cooking oil
5 pieces of Baguio Beans cut into half (optional)

Procedures:

Part 1 
1. Sprinkle the fish with salt.
2. In a pan, heat cooking oil and fry fish until brown. Drain and set aside.

If it’s a left over Galunggong, you may skip Part 1.

Part 2
1. In another clean pan, add the oil then saute onion, garlic and tomatoes until soft.
2. Add water, fish sauce and ground pepper. Bring to boil.
3. Add beaten eggs, once the eggs curdles start stirring the mixture.
4. Add fried galunggong and simmer for minutes.
5. Transfer to serving plate. Serve with rice.
