Green Bean Chicken

Velveting of Chicken – is a Chinese cooking technique used in stir-frying. The chicken breast is coated in a mixture of egg white and cornstarch (rice wine or dry sherry and salt are frequently added), marinated for up to 30 minutes, and then cooked very briefly in hot oil until the color turns to white. After velveting, the chicken is added to the stir-fry, to finish cooking with the other ingredients.

Ingredients for Velveting

1 Egg White

1 Tbsp Chinese Wine

2 Tbsp Oil

1 tbsp Cornstarch

1 Chicken Breast – cut into strips

Salt

Combine egg white, Chinese wine, oil, cornstarch and salt. Whisk together. Add the chicken strips and marinade for 30 minutes. In this recipe I marinated it overnight.

Ingredients for Stir Fry Sauce

1/3 cup oyster sauce

1 Chicken Cube

3 tbsp Chinese Wine

3 tbsp Soy Sauce

2 tsp sugar

1 tbsp sesame oil

1 tbsp cornstarch

1/4 tsp pepper

Combine all ingredients and whisk until well blended. Set aside or if you are planning to cook it the next day like what I did, you may place it in a sealed container and store it in the fridge overnight. 

Ingredients for Stir Frying

2 Gloves of garlic minced

1 small Ginger Grated

2 tbsp oil

Baguio Beans

Procedure:

  1. Heat the pot.
  2. Add cooking oil and chicken.
  3. Let it cook for 3 minutes.
  4. Set aside.
  5. In the same pan, add oil (optional if there’s still oil left in the pan) , garlic and ginger.
  6. Stir for 30 seconds or until aromatic.
  7. Add the beans and let it cook for about 2 minutes.
  8. Pour in the stir fry sauce.
  9. Cook for 1-2 minutes.
  10. Add the chicken and cook for another 2-13 minutes.

Serve and Enjoy!
