Sweat Free Bicol Express

Why sweat free? Because, you have the option to not include the chili. 🙂 We have to do this because my Mother in Law and Aidan doesn’t eat spicy food. Here’s a quick and easy recipe of Dada. =) 


  • 2 cups coconut milk
  • 1/4  pork belly, cut into strips
  • 6pcs sitsaro cut into small pieces
  • 1 tbsp Garlic, minced
  • 3 pieces Thai chili or Serrano pepper
  •  minced ginger
  • 1 medium onion, minced
  • 2 tablespoons cooking oil
  • Salt and Pepper to taste

Cooking Procedure

  1. Heat a pan and then pour-in the cooking oil.
  2. Sauté the garlic, onion, and ginger
  3. Add the pork and then continue cooking for 5 to 7 minutes or until the color becomes light brown
  4. Pour the coconut milk in. Bring to a boil. Simmer for 40 minutes or until the pork is tender
  5. Add the sitsaro and simmer for another 5-10 minutes.
  6. Add salt and ground black pepper to taste
  7. Serve Hot. Enjoy!
