Pork with Bamboo Shoots



Bamboo shoots – are the edible shoots that come out of the ground of bamboo species. They are used in numerous Asian dishes and broths. Here in Manila they call it Labong. In our province in Iloilo, we call it Tambo. 





Tambo with Pork is one of my favorite Ilonggo dish that my mother would cook for me. 

Here’s one recipe of Tambo (Bamboo Shoots/Labong) that my Nanay taught me. =) 

Ingredients:

1/4 kilo Bamboo Shoots/Labong/Tambo (Cut into strips)
1/4 kilo Pork (cut into cubes)
1 onions (diced)
5 cloves of garlic (diced)
2 tomatoes (sliced)
4-5 cups of water
Cooking Oil
1 Pork Cube
1 Magic Sarap

Procedure:

1. In a medium sized pot, add water and bamboo shoots.
2. Boil until the Bamboo Shoots are soft. Squeeze out excess water.
3. In another pot, pour cooking oil.
4. Saute garlic, onions and tomatoes.
5. Add the Pork until cooked.
6. Add the Pork cube.
7. Add water 
8. Add the Bamboo shoots.
9. Season with Magic Sarap to taste.
10. Wait for it to boil again until cooked.

Serve with rice and enjoy. =)
