Bunch of Banana Bread

Here’s another treat to my husband on Father’s Day. It was my first attempt at baking bread so I was a little nervous. Thankfully my husband was there to assist me. =)

1 1/2 cups all-purpose flour
1 1/4 teasponns baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
2 slightly beaten egg whites
1 cup mashed banana (3 medium)
3/4 cup sugar
1/4 cup cooking oil
1. Lightly coat a loaf pan with oil; set aside.
2. In a medium bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Set aside.
3. Bake in a 350 degree F oven for 45 to 50 minutes or until a wooden toothpink inserted near the center comes out clean.
4. Cool in pan in a wire rack for 10 minutes.
5. Remove from pan.
6. Cool completely on rack.
7. Wrap and store overnight before slicing.
Makes 1 loaf (16 servings)
